LAYERED LEMON POPPY SEED CAKE

Ingredients

1 box Lemon Poppy Seed Cake Mix
¾ cup milk
1/3 cup oil
2 eggs
Zest of 1 lemon

Lemon Frosting:
1 brick (250 g) cream cheese
¼ cup butter, softened
1 Tbsp. lemon juice
4 cups icing sugar

Beat cream cheese, butter and lemon juice in large bowl with mixer until blended. Add sugar gradually, beating after each addition until blended.

Instructions

Preheat oven to 350°F. In a large bowl, combine cake mix, milk, oil and eggs; stir to blend. Pour batter into a greased 8" cake pan and bake for 30-40 minutes. Cool completely, then slice in half. Spread bottom half with Lemon Frosting, place other half directly on top of bottom and spread with remaining frosting; sprinkle with lemon zest.
(Optional: drizzle the bottom layer with Limoncello Liqueur, other liqueur or a light layer of raspberry jam before adding frosting).
